Sir Torshi (Pickled Garlic)
Sir Torshi is a traditional and highly popular condiment in Persian cuisine, made by fermenting whole garlic cloves in vinegar for an extended period, often several years. During this process, the garlic softens, darkens to a deep brown color, and develops a mild, sweet, and tangy flavor.
This pickle is commonly served as a flavorful accompaniment to various Iranian dishes. Rice, kebabs, stews, fish, kaleh pacheh (head and trotters stew), and other traditional meals are often paired with sir torshi, enhancing their taste and aiding digestion.
Benefits and Properties:

• Helps Lower Blood Pressure and Cholesterol – Some studies suggest that regular consumption of pickled garlic may contribute to reduced blood pressure and cholesterol levels.
